These are so tasty, and they dissapear fast in our home. My husband doens’t like muffins typically- but he LOVES these. Recipe courtesy of my friend Kristine S.

Muffin Ingredients: 

1 1/2 c. / 200g. flour

1 t. baking powder

1 t. baking soda

1 c./200 g. sugar

1 egg

1 t. vanilla

2 T. oil

2/3 cup / 130 ml. kefir or buttermilk or sour milk

2 c. or 200 g. chopped rhubarb


1/4 c. / 50 g. brown sugar

1 scant cup/ 75 g. oatmeal

1 t. cinnamon

1 T. flour

4 T. / 50 g. butter


Mix ingredients  for batter together gently but throughly, adding in rhubarb at end. Fill muffin tin.

Crumble all ingredients together for topping and sprinkle on top of the uncooked muffins. Bake at 350 until golden .

Makes apx. 12.

I like to double the recipe for the muffins- because they are so delicious and the topping is enough for a double batch wtihout doubling it.
